Roasted Calabaza Soup

Ingredients:

  • 3 Lbs. Calabaza, Peeled and Cut into Large Chunks
  • 3 Tbsps. Olive Oil
  • 3 Cloves Garlic, Minced
  • 1 ½ Cups Onion, Diced
  • 3 ½ Cups Chicken Broth
  • 1 Cup Half and Half
  • 3 Tbsps. Butter
  • ½ Tsp Ground Cinnamon
  • ¼ Tsp. Ground Nutmeg
  • ½ Tsp. Salt
  • ¼ Tsp. Black Pepper
  • Croutons for Topping

Instructions:

  1. Preheat oven to 400°F.
  2. Add the calabaza chunks to a foil-lined baking sheet. Drizzle with olive oil and season with salt and pepper. Roast the calabaza for about 30 minutes at 400°F or until tender.
  3. Heat 1 tablespoon of olive oil in a large saucepan on medium heat. Add garlic and onion and cook until tender.
  4. Next add the chicken broth and calabaza to saucepan with the garlic and onion. Using an immersion blender, food processor, or blender, blend the mixture until smooth. Please note, if you are using a food processor or blender, you will need blend in small batches and add back into the saucepan once smooth.
  5. Finally, stir in the half and half, butter, cinnamon, nutmeg, salt and pepper into the calabaza mixture. Cook over medium heat, stirring occasionally, until just boiling.
  6. Serve warm with buttered croutons.
