Chinese Eggplant

Chinese eggplants are similar to the traditional western eggplant you might recognize but they are usually longer (12-18inches) and a lavender color. They have fewer seeds making them more tender and a little less bitter with a mild, sweet flavor

Chinese eggplants are popularly used in stir-fries and they can also be roasted, grilled or fried.

Crystal Valley Chinese eggplant are available year-round from the Dominican Republic and Honduras.

TIPS FOR SELECTION

Choose an eggplant that is firm, heavy, and that has glossy, unblemished, deep lavender colored skin.
