The Belgian endive, sometimes known to Belgians as “white gold”, is grown in complete darkness to prevent the production of chlorophyll which in turn makes it green. Endives are tender and have a soft texture, delicate crunch, and a pleasant, bitter flavor. They can be enjoyed cooked or raw so try adding endive as a salad base, steaming, sautéing, stuffing or even grilling the leaves!

Look for Belgian endive that are crisp and have tight leaves. Avoid choosing any that are wilted and/or have browning leaves.
