Scotch Bonnet Peppers
These small, lantern-shaped peppers originally got their name from their resemblance to the “tam o’ shanter bonnet” from Scotland, despite hailing from Central and South America. One of the hottest chili peppers available, Scotch bonnet peppers range from 80,000 to 350,000 (SHU) on the Scoville scale but have a slightly sweeter flavor than the closely-related habanero. Scotch bonnets are a key ingredient in Jamaican jerk recipes and bring a complex heat to many dishes.
Tips for Selection
Select Scotch Bonnets that are firm, glossy and vibrant without wrinkles or soft spots.
