Indian Eggplant

Indian eggplants are similar to the traditional western eggplant however they are small and oval-shaped. They also have a thicker skin and a stronger, sweeter flavor.

Indian eggplants can be stuffed, grilled, or baked. They are commonly used in vegetarian, curry-based dishes like Baingan Bharta, where the eggplants are chopped with other vegetables and served with rice or bread.

Crystal Valley Indian eggplant are available year-round from the Dominican Republic and Honduras.
