Heirloom Tomato Pie
Ingredients:
- 9 in. Deep Dish Pie Shell
- 3 Heirloom Tomatoes, Thinly Sliced
- 1 Tsp. Kosher Salt
- ¾ Cup Green Onion, Chopped
- 1/2 Cup Basil, Sliced
- 1 Garlic Clove, Minced
- 1 Cup Sharp Cheddar Cheese, Grated
- 1 Cup Mozzarella Cheese, Grated
- ¾ Cup Low Fat Plain Greek Yogurt (You Can Also Use Mayonnaise)
- Black Pepper
- 4 Tbsps. Parmesan Cheese, Grated
Instructions:
- Preheat oven to 350°F.
- Bake pie shell for 10 minutes or until lightly browned.
- While you’re baking the pie shell, lightly salt the tomatoes and place in a colander in one layer in the sink. Let them drain for about 10 minutes. Pat them with a paper towel to get rid of any excess moisture.
- Mix the onions, basil, garlic, a dash of salt and pepper together.
- Layer the tomatoes and basil/onion mixture in the pre-baked pie shell.
- In a medium bowl mix together the cheese, Greek yogurt (or mayonnaise) and spread over the tomatoes and basil/onion layers.
- Sprinkle parmesan cheese over the top.
