Heirloom Tomato Pie

Ingredients:

  • 9 in. Deep Dish Pie Shell
  • 3 Heirloom Tomatoes, Thinly Sliced
  • 1 Tsp. Kosher Salt
  • ¾ Cup Green Onion, Chopped
  • 1/2 Cup Basil, Sliced
  • 1 Garlic Clove, Minced
  • 1 Cup Sharp Cheddar Cheese, Grated
  • 1 Cup Mozzarella Cheese, Grated
  • ¾ Cup Low Fat Plain Greek Yogurt (You Can Also Use Mayonnaise)
  • Black Pepper
  • 4 Tbsps. Parmesan Cheese, Grated

Instructions:

  1. Preheat oven to 350°F.
  2. Bake pie shell for 10 minutes or until lightly browned.
  3. While you’re baking the pie shell, lightly salt the tomatoes and place in a colander in one layer in the sink. Let them drain for about 10 minutes. Pat them with a paper towel to get rid of any excess moisture.
  4. Mix the onions, basil, garlic, a dash of salt and pepper together.
  5. Layer the tomatoes and basil/onion mixture in the pre-baked pie shell.
  6. In a medium bowl mix together the cheese, Greek yogurt (or mayonnaise) and spread over the tomatoes and basil/onion layers.
  7. Sprinkle parmesan cheese over the top.
  8. Place pie in oven and bake at 350 for about 45-50 minutes or until browned and bubbling,
