Blueberry Cobbler

Ingredients:

Blueberry Filling

  • 2 Pints Fresh Blueberries
  • ¼ Cup Orange Juice
  • ¼ Cup Sugar
  • ¼ Cup Flour

Topping

  • 1 Cup Flour
  • ¼ Cup Sugar
  • 1 Tsp. Baking Powder
  • 1/4 Tsp. Cinnamon
  • 1 Egg
  • 1/4 Cup Milk
  • 2 Tbsp. Canola Oil

Instructions:

  1. Preheat oven to 375°F
  2. Lightly grease an 8×8-inch baking dish.
  3. In a large bowl combine the blueberries, 1/4 cup sugar, orange juice, and 1/4 cup flour. Pour into prepared baking dish.
  4. In a second large bowl, stir together 1 cup flour, 1/4 cup sugar, baking powder and cinnamon. Next add in the egg, milk and oil and stir until mixed.
  5. Drop batter over the blueberries and cover as much of the fruit as possible.
  6. Bake 35 to 40 minutes or until top is golden brown and filling is bubbling.
  7.  Serve warm with vanilla ice cream!
