Ingredients:
Blueberry Filling
- 2 Pints Fresh Blueberries
- ¼ Cup Orange Juice
- ¼ Cup Sugar
- ¼ Cup Flour
Topping
- 1 Cup Flour
- ¼ Cup Sugar
- 1 Tsp. Baking Powder
- 1/4 Tsp. Cinnamon
- 1 Egg
- 1/4 Cup Milk
- 2 Tbsp. Canola Oil
Instructions:
- Preheat oven to 375°F
- Lightly grease an 8×8-inch baking dish.
- In a large bowl combine the blueberries, 1/4 cup sugar, orange juice, and 1/4 cup flour. Pour into prepared baking dish.
- In a second large bowl, stir together 1 cup flour, 1/4 cup sugar, baking powder and cinnamon. Next add in the egg, milk and oil and stir until mixed.
- Drop batter over the blueberries and cover as much of the fruit as possible.
- Bake 35 to 40 minutes or until top is golden brown and filling is bubbling.
- Serve warm with vanilla ice cream!
