Black Bean Salsa

Ingredients
- 1 Medium Sized Yellow Beefsteak Tomato, Diced
- 1 Green Bell Pepper, Diced
- 1 Red Onion, Diced
- 1 (1 lb, 13 oz.) Can Black Beans, Well Drained
- 1 (11oz) Can Whole Kernel Corn, Well Drained
- ¼ Cup Cilantro, Chopped
- 4 tbsp Fresh Lime Juice
- 1/4 Cup Olive Oil
- 3 tbsp Red Wine Vinegar
- 1/3 tsp Salt, Add More to Taste
- Ground Black Pepper to Taste
Instructions
- In a large bowl combine the black beans, corn, cilantro, green pepper, onion, tomato, oil, vinegar, lime juice, salt and pepper.
- Mix ingredients together.
- Cover and refrigerate for about 2 hours before serving.
This salsa is great as a dip with chips or served on top of grilled chicken and salmon.
