Baby Heirloom Tomatoes and Green Onion on Pumpernickel Toast

Ingredients:

  • 9 Baby Heirloom Tomatoes
  • 2 Tbsp. Green Onion (add more if desired)
  • Low-Fat Whipped Cream Cheese
  • 2 Slices Pumpernickel Bread

Instructions:

  1. Wash the vegetables thoroughly.
  2. Chop the green onion and set aside.
  3. Slice each baby heirloom tomato in half and set aside.
  4. Toast the pumpernickel slices.
  5. Spread the cream cheese on the toast and add the tomatoes. Sprinkle with green onion.
