Black Bean Salsa


1 Medium Sized Yellow Beefsteak Tomato, Diced
1 Green Bell Pepper, Diced
1 Red Onion, Diced
1 (1 lb, 13 oz.) Can Black Beans, Well Drained
1 (11oz) Can Whole Kernel Corn, Well Drained
¼ Cup Cilantro, Chopped
4 tbsp Fresh Lime Juice
1/4 Cup Olive Oil
3 tbsp Red Wine Vinegar
1/3 tsp Salt, Add More to Taste
Ground Black Pepper to Taste


  1. In a large bowl combine the black beans, corn, cilantro, green pepper, onion, tomato, oil, vinegar, lime juice, salt and pepper.
  2. Mix ingredients together.
  3. Cover and refrigerate for about 2 hours before serving.

This salsa is great as a dip with chips or served on top of grilled chicken and salmon.
