Baby Corn

Baby corn is an ear of corn harvested before the stalk is fully grown.  They are picked as soon as the corn silks emerge from the ear tips. Fresh baby corn is tender, easy to cook, and is eaten whole. Since baby corn is immature it doesn’t carry the same level of starches and sugar as fully grown corn. The bright yellow baby corn will be sweet while the white baby corn will be a bit starchier. Crystal Valley hand-harvests baby corn from Guatemala year-round.

TIPS FOR SELECTION

Look for baby corn that is bright and fresh without kernels that are sunken or wrinkled.

HOW TO STORE

Baby corn can be refrigerated but is best served fresh.

HOW TO COOK

Baby corn can be eaten raw on its own as a healthy, crunchy snack or added to a crudité with dip. It can also be roasted, steamed, stir fried, or pickled.
