Baby Heirloom Tomatoes and Green Onion on Pumpernickel Toast
- 9 Baby Heirloom Tomatoes
- 2 Tbsp. Green Onion (add more if desired)
- Low-Fat Whipped Cream Cheese
- 2 Slices Pumpernickel Bread
- Wash the vegetables thoroughly.
- Chop the green onion and set aside.
- Slice each baby heirloom tomato in half and set aside.
- Toast the pumpernickel slices.
- Spread the cream cheese on the toast and add the tomatoes. Sprinkle with green onion.
