Hearts of Palm

A fresh heart of palm, also known as “swamp cabbage” or “millionaire’s salad”, is a vegetable harvested from the inner core of a young cabbage palm (in addition to a variety of others). They look like white asparagus with a firm texture, like that of artichoke hearts, and taste like them as well with a delicate, nutty flavor.

Crystal Valley’s Fresh hearts of palm are hand cut in Guatemala when they’re very young and they arrive fresh, clean and ready-to-use.

HOW TO COOK

Hearts of palm are extremely versatile. They should be boiled first in salted water until they can be easily pierced and then used to eat or add to dishes. You can then bake with butter breadcrumbs and cheese, slice and add to salads, grains, pastas, pizzas, and salsas, stuff or fill them with meets, or add them to stews and casseroles. You can also serve them as a cold appetizer with a vinaigrette or hot with a cheese sauce.
